Basil Fruit Salad with Cottage Cheese

This salad is a sleeper hit. You may not have thought to put these ingredients together before now, but here's your new favorite lunch (or breakfast) meal.

Ingredients

  • 3 tablespoons orange juice

  • 2 teaspoons olive oil

  • 2 teaspoons honey

  • ½ teaspoon kosher salt

  • 1 16 ounce carton cottage cheese

  • 1 cup chopped English cucumber

  • 1 cup chopped fresh peaches

  • ½ cup fresh blueberries

  • Fresh ground black pepper

  • Chopped fresh basil

Directions

  1. In a lidded jar, combine orange juice, olive oil, honey and salt; shake well. Divide cottage cheese among four bowls. Divide cucumber, peaches and blueberries among bowls. Drizzle dressing over salads. Garnish with pepper and basil.
