Smoked Salmon Salad with Everything Bagel Seasoning

Turn breakfast into dinner! This salad is loaded with all the flavors of your favorite bagel shop—smoked salmon, avocado, cucumber, jammy eggs, bagel chip "croutons" and creamy dressing.

Ingredients

  • 4 cups chopped romaine lettuce or mixed greens

  • 1 cup halved cherry tomatoes

  • 1 cup sliced English cucumber

  • 1 medium avocado, halved, pitted, peeled, and sliced

  • 4 ounces hot-smoked salmon, broken up

  • 2 - 3 medium-boiled eggs, halved*

  • ½ cup bagel crisps

  • Freshly ground black pepper

  • 1 5.3 ounce carton (2/3 cup) plain Greek yogurt

  • 2 tablespoons everything bagel seasoning**

  • cup milk

Directions

  1. In a serving dish, arrange lettuce, tomatoes, cucumber, avocado and salmon. Top with eggs and bagel crisps. Sprinkle with pepper.

  2. For dressing, in a small bowl, stir together yogurt and bagel seasoning. Slowly add milk to reach a drizzling consistency. Serve salad with dressing.

*FOR MEDIUM-BOILED EGGS

In a small saucepan, bring water to boiling. Using a slotted spoon, lower eggs into water. Reduce heat to maintain a gentle boil. Boil 8 minutes for jammy (not set) yolks.

**INGREDIENT TIP

To make your own bagel seasoning, mix together 2 teaspoons each poppy and sesame seeds; 1 teaspoon each dried minced garlic and onion; and 1/2 teaspoon kosher salt.
