Ingredients

  • ¼ cup olive oil

  • 2 tablespoons cider vinegar

  • 1 tablespoon whole-grain or Dijon-style mustard

  • 1 tablespoon finely chopped shallot

  • ¼ teaspoon salt

  • 3 cups thinly shaved red cabbage

  • 2 tart cooking apples (1 pound) (Greening, Granny Smith, Mutsu), sliced 1/4 inch thick

  • 4 ounces cooked ham, cut into bite-size strips or cubed

  • ¾ cup coarsely chopped Italian parsley

Directions

  1. In a large bowl, whisk together oil, vinegar, mustard, shallot and salt. Add cabbage, apples, ham and parsley; toss to coat.
