Spinach-Farro Salad with Cherries

This simple salad is a healthy entree for lunch or a light supper. Tangy goat cheese plays well with the sweet cherries.

Ingredients

  • 3 tablespoons white wine vinegar or champagne vinegar

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • 7 tablespoons extra-virgin olive oil

  • ¾ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • 10 ounces fresh baby spinach

  • 1 ¾ cups cooked farro

  • 2 cups halved pitted sweet cherries

  • 1 cup broken toasted walnuts

  • 4 ounces soft goat cheese, crumbled

Directions

  1. In a large bowl, whisk together vinegar, honey and mustard. While whisking constantly, slowly drizzle in olive oil. Whisk in salt and pepper.

  2. Add spinach and farro; toss to coat. Add cherries and 1 cup broken toasted walnuts; toss to combine. Top salad with goat cheese. Serve immediately.
