Mashed Sweet Potatoes with Orange and Mascarpone

A pat of butter and a sprinkle of black pepper is all it takes to crown this rich and creamy sweet mash.

Ingredients

  • ¼ cup butter

  • 3 pound (5 to 6 medium) sweet potatoes, peeled and cut into 1-inch cubes

  • cup orange juice

  • 2 tablespoons pure maple syrup

  • 4 ounces mascarpone cheese

  • 2 teaspoons orange zest

  • 1 teaspoon ground cardamom

Directions

  1. In a 4- to 5-quart Dutch oven, melt butter over medium heat. Stir in sweet potatoes, orange juice and maple syrup. Bring to a boil; reduce heat to medium-low. Cover and cook until tender, about 45 minutes.

  2. Remove from heat (do not drain). Mash with potato masher. Stir in mascarpone cheese, orange zest and cardamom. Serve warm.
