Midwest Living's Editorial Guidelines Published on August 2, 2023 Print Share Photo: Kelsey Hansen Hands On Time: 15 mins Total Time: 25 mins Servings: 4 Ingredients 5 ounces uncooked chorizo 1 cup chopped white onion 1 small fresh serrano chile pepper, finely chopped 1 tablespoon vegetable oil (optional) ¼ teaspoon kosher salt 3 cups hredded Chihuahua cheese or Monterey Jack Assorted toppers such as: pico de gallo, avocado, cilantro, and/or sliced radishes Soft corn or flour tortillas, warmed Directions Preheat oven to 400°. In an 8-inch cast-iron skillet, brown chorizo over medium, 5 to 7 minutes. Transfer to a plate. In the same skillet, cook onion and chile pepper in vegetable oil (if needed) until softened, 5 to 8 minutes. Add salt. Stir in all but 2 tablespoons of the chorizo. Sprinkle with Chihuahua cheese. Bake until cheese melts and bubbles, 8 to 10 minutes. Top with reserved chorizo and desired toppers. Scoop into warm corn or flour tortillas.
